The future of food and nutrition is uncertain. We expect 9.7 billion people to be on this planet by 2050, all of whom need to be supported by our food production. Climate change, droughts, limited water access, over-fishing, and a variety of potential food-related diseases remain a growing risk to our well-being.
Nutrition is another major uncertainty. Food production is globalized, but producers are faceless. We rely on importers, distributors, restaurants and retailers to choose good ingredients for us to consume. Yet, the nutritional content of our food is a question to many. The end result is overnutrition and undernutrition across populations in North America and the developing world.
